So this is an adapted Mary Berry (we love you!) recipe.The mixed spice is absolutely key here – really makes it feel festive if you are not into the standard “Christmas Cake”…

For the cake:
- 275g butter, mine was pretty cold
- 4 eggs
- 285g self raising flour
- 300g caster sugar
- 3 level tsp baking powder
- 2 level tsp mixed spice
- Juice of 1 large orange
- Rind of half the orange
For the middle:
- 50g butter
- 125g icing sugar
- 1/3 of an orange worth of juice
Mix the butter and the eggs, breaking up the butter. Now add the eggs. Beat until smoothish. Add the flour, baking powder and spice. Beat again. Now pour in the juice and add the rind. Beat to paste.
Pop the mix in two identical baking tins. Cook for 30 mins at 190. After 10 minutes or so cover with tin foil to stop the top burning. It is done when you can stick a knife in and it comes out clean.
For the icing
Beat everything together and when the cake has cooled, spread it on.
